Chocolate Chip Almond Biscotti
My 14 year old son Roan breaks the myth that Biscotti is hard to make. He created this deliciously sweet and balanced Biscotti with his favorite ingredients. His simple video tutorial will help you realize how easy it is to make.

- 2 cups all-purpose flour
- 1½ teaspoon baking powder
- ¾ cup sugar
- ½ cup butter unsalted, room temperature
- 1 teaspoon lemon zest grated
- ¼ teaspoon salt
- 2 eggs large
- ½ cup almonds chopped
- ¼ cup pecans chopped
- 1 cup chocolate chips semi-sweet
Mix the Dough
Whisk the flour and baking powder in a medium bowl. Set aside.
In a separate bowl use an electric mixer (or mix by hand as Roan likes to do) to combine sugar, butter, lemon zest and salt. Beat in eggs 1 at a time.
Add the flour mixture just until combined.
Chop nuts. Stir nuts and chocolate chips into dough.
Form the Biscotti
Form the dough into a 13-inch-long 3-4 inch wide log on prepared baking sheet.
Dough should be about 1 inch thick.
Roan's Tip: If the dough is sticky just add a bit more flour.
Bake
Bake about 40 minutes. Cool for 30 minutes.
Place the cooled log on cutting board. Cut into ½ - ¾-inch diagonal slices using a sharp serrated knife. Arrange the biscotti cut side down on the baking sheet. Bake 15-20 minutes until edges start to turn golden brown.
Transfer to rack to cool completely.
